A single cup of raw kale contains :

  • Vitamin A: 206% of the DV
  • Vitamin K: 684% of the DV
  • Vitamin C: 134% of the DV
  • Vitamin B6: 9% of the DV
  • Manganese: 26% of the DV
  • Calcium: 9% of the DV
  • Copper: 10% of the DV
  • Potassium: 9% of the DV
  • Magnesium: 6% of the DV
  • It also contains 3% or more of the DV for vitamin B1, vitamin B2, vitamin B3, iron and phosphorus.

Ingredients:

1 pack of Kaleslaw mix
2 Potatoes
1/4 cup crumble feta cheese

Method:

Pierce your potatoes, wrap them in foil & place them in a hot oven to bake for 45 minutes, or until tender. You can test them by poking a knife through the centre. If the knife comes out covered in soft potato, they're done. If the knife is clean, the potatoes are not yet ready.

Meanwhile, toss your kaleslaw leaves together with the seed mix & dressing which is included in the bag.
Add a pinch of sea salt.

Once your potatoes are soft, slice them into 4 equal parts & top with crumbled feta.

Heap with kaleslaw & serve.

Enjoy :)
